The Great Delhi Pop-Up with food critic and writer Anoothi Vishal was first in the series of initiatives by V Resorts to discover, uncover, revive and showcase the local India. The country is abundant in culture, heritage, food, each region, diverse and unique, and offering opportunities to be experienced. On paper, V Resorts is a new age travel solutions company that provides standardised experiences in the leisure travel space, but what they truly believe travel is knowing yourself through knowing what is out there. V Resorts believe in gems each corner of India offers. That\'s why each of the resorts has curated experiences - regional food the rest of India hasn\'t heard about, nooks and cranies no one has seen, but that beat international destinations any day.
The Great Delhi Pop-Up was one such effort by V Resorts, they got together a few foodies, an expert, got together the heritage Kayastha food, and had great conversations over palak chaat and celebrated Holi.
Amid sprawling green lawns and soulful classical renditions, a select gathering of guests was treated to some unforgettable Kayastha food at the V Resorts Training and Recreation Centre at Mandi, Delhi, on Sunday March 20.
The cuisine was carefully chosen and lovingly prepared under the supervision of food critic and writer Anoothi Vishal who does columns for The Economic Times and NDTV.com.
One of the guests, Chef Vikramjit Roy, a close friend of Anoothi\'s, also got into the groove at the V Resorts kitchen, adding fun and flavour to the preparations even before the actual evening began!
Speaking on the occasion, Anoothi said: ?Kayastha cuisine has always been special to me and my family. Today is a very special evening, where we were able to share a slice of this wonderful heritage food with such a great gathering at this V Resorts property. I\'m overwhelmed by the manner in which our guests embraced this event and the philosophy behind it.?

The guests included Chef Saransh Goila, TV show host and author of India On My Plate; Aliki Koutsomitopoulo, senior diplomat at the Greek embassy; Vidya Deshpande, founder of the all-woman travel company SOULPURPOSE, and Saloni Zaveri-Ahluwalia, senior Advisor -- Press, Information & Cultural Affairs, Swedish embassy. A delighted Saransh said that endeavours like these by Anoothi and V Resorts were a great way to ?celebrate the amazing diversity of cuisines in India?.
